Asian Marinated Chicken with Corn and Basil Fried Rice

Hey! A post! Roughly an hour ago I made some dinner and here is a picture of it. Isn’t it thrilling? I have no process shots to show you, and I’m not going to post my version of the recipe. Here’s what I’ll say. It was really good, and healthy, too! Here’s a link to the recipe. the things I changed were that I only marinated for an hour, and I forgot to add the lime zest at the end, even though I had lime. Oops! Enjoy your weeks! I’ll be buried in books.

looks quite tasty. I like your picture better than the original :-) . I will have to get the mirin but other than that I think I have it all even the limes! good fast (once the marinating is done) and easy…I like this.

Yay! If you haven’t made it yet, I’d suggest making more of the rice and corn than the recipe calls for. Since it’s a healthy recipe, I think the serving size on the rice is a bit smaller than the normal person is used to, and for company I’d probably want to have a little bit extra.
